Garden Sausage Casserole Recipe

I cooked this sausage casserole for the first the other night. The family loved it, we are going to try it as a breakfast sausage casserole next. Then we could call it an egg sausage casserole. I will let you know how good our egg cheese sausage casserole for breakfast was. You can use either Italian sausage, sausage patties, bratwurst, ground sausage just whatever you want to use. This is a very easy recipe to follow, and cook. After you have tried this casserole dish, let me know how much you like it.


1 pound bulk, Italian sausage

1/4 cup flour, divided

1/2 cup chopped onion

2 cloves garlic, minced

3 tablespoons butter

5 cups sliced zucchini (1/4-inch thick)

1-1/2 cups thinly sliced fresh mushrooms

2 cups cottage cheese

1/4 cup grated parmesan cheese

2 eggs

1 cup (4 ounces) mild cheddar cheese, finely shredded


1. In a large skillet, brown sausage and drain

2. Toss with 1 tablespoon of the flour and place in bottom of buttered 2 quart baking dish.

3. Saute` onion and garlic in butter until almost tender. Add zucchini and mushrooms; saute` 2 to 3 additional minutes.

4. Remove from heat, toss with remaining flour. Spoon half the mixture over meat.

5. In  medium bowl, blend cottage cheese, parmesan cheese, and eggs until well-blended. Pour over zucchini layer. Top with remaining zucchini mixture.

6. Bake at 350 degrees F. for 30 to 35 minutes. Top with cheddar cheese and bake 5 minutes longer.

Total Time: 40 to 50 Minutes
